Ice machines are easy to overlook until you run out of ice during a Friday night service. Then you suddenly care a lot. The right machine depends on three things: how much ice you need, where you can put it, and what shape of ice your drinks need.

The Three Size Categories

Commercial ice machines come in three physical sizes, and the size affects both capacity and where you can place them.

Undercounter machines are under 82cm tall. They fit neatly beneath counters and bars. Perfect for cafes, small bars, and restaurants with limited space. They produce 15-50 kg of ice per day depending on the model.

Countertop machines stand 82-90cm tall. They sit on top of counters or storage bins. Common in mid-sized bars, hotel pantries, and restaurant service stations. Production ranges from 30-80 kg per day.

Upright or floor standing machines are over 100cm tall. These are serious producers, 80-300+ kg per day. You’ll find them in high-volume bars, hotel kitchens, central kitchens, and food production facilities. They usually sit on their own storage bin with a dispenser.

Ice Shapes Matter More Than You Think

There are three main ice shapes, and they’re not interchangeable.

Cube ice is the standard. Slow-melting, great for soft drinks and water. Bullet, crescent, and gourmet cubes are sub-variants. Gourmet cubes (clear, dense) are the gold standard for premium bars and hotels.

Flake ice is soft and moldable. Used for food displays (seafood, salad bars), healthcare, and some cocktails. It cools fast but melts fast too.

Nugget or pearl ice is chewable. It’s the Sonic / 7-Eleven style ice. Absorbs drink flavour, soft texture. Popular in fast food and bubble tea shops. Malaysia’s boba craze has made nugget ice machines much more popular.

Sizing It Right

General rule of thumb: estimate how much ice you use on a busy day and buy a machine that produces at least 80% of that amount in 24 hours. The machine’s storage bin should hold at least 50% of your daily usage.

A small cafe serving 100 drinks a day needs roughly 20-30 kg of ice. Medium restaurant doing 200-300 covers? 40-60 kg. Hotel banquet kitchen serving 500+ covers plus buffets? You’re looking at 150-300 kg.

And always factor in Malaysia’s climate. Your ice melts faster here. Machines work harder in ambient heat. It affects both production rate and storage holding time.
