If there’s one piece of equipment that quietly makes or breaks a kitchen’s efficiency, it’s the dishwasher. A slow or unreliable dish machine means backed-up service, stressed-out staff, and dirty plates piling up during the dinner rush. Here’s a rundown of what’s available and what fits your operation.
The Four Types of Commercial Dishwashers
There are four main categories, and each one suits a different scale of operation.
Undercounter dishwashers are the smallest. They fit under a standard countertop, handle about 15-30 racks per hour, and are ideal for small cafes, bars, and satellite kitchens. You load, close the door, and it runs a 60-120 second cycle.
Hood or upright dishwashers sit on the floor and have a hood that lifts up and down. They handle 30-60 racks per hour. Good for mid-sized restaurants. Operators place the rack inside and pull the hood down to start.
Conveyor dishwashers are the next step up. Racks move through a tunnel on a conveyor belt. Throughput is 80-200 racks per hour. Common in hotel banquets, large restaurants, and institutional kitchens.
Flight type dishwashers are the big boys. Dishes go directly onto a conveyor belt pegs (no racks needed). Throughput can hit 300+ racks per hour. Found in high-volume operations like hotel central kitchens, large cafeterias, and food production facilities.

The most common mistake we see is buying the wrong size. A cafe owner buys a flight type because they’re planning to grow big in two years. Meanwhile they’re running 10 racks an hour through a machine that needs 300 litres of water per cycle. Their water and electricity bills are painful.
On the flip side, a busy restaurant tries to get by with an undercounter machine and ends up running it nonstop for three hours after service. The machine burns out in 18 months.
The sweet spot: match the machine to your average daily covers, not your peak. If you peak at 300 covers on Saturday but average 150, size for the average and have a backup plan for Saturdays.
