• Burner power: Measured in BTU or kW. Wok burners should be 30,000-60,000 BTU for real stir-fry heat. Standard burners at 15,000-25,000 BTU handle most other cooking.
• Build: Look for 18/10 or 18/8 stainless steel body. Cheaper ranges use thinner steel that warps over time.
• Configuration: Open burners (most common in Western kitchens), wok burners (must-have for Malaysian Chinese cooking), and hot plates (for even heating, used in Indian roti/chapati prep).
• Oven base: Many ranges include an oven underneath. For Malaysian kitchens, the oven is often less critical than the burner power. Some operators prefer ranges without ovens and use separate combi ovens instead.
